Gardens of Normandy: From Landscape to Garden Artistry
At the crossroads of Normandy and Brittany, between the Bay of Mont-Saint-Michel and the hedgerow-lined valleys of the surrounding countryside, this itinerary explores the many ways in which a landscape becomes a garden. From a tidal bay shaped by the sea to the parks of historic estates, from La Ballue’s sculptural compositions to remarkable botanical collections, the journey reveals nature as it is observed, shaped, interpreted, and ultimately lived in.
Although these destinations lie within a relatively compact area, each offers a distinctive vision of the garden. The journey begins with the grandeur of the natural landscape, moves toward gardens created as works of art, and concludes in the intimacy of a private estate brought to life and shared by its owners.

Day 1: Monumental Landscapes & the Living Estate
A glimpse of your first day’s itinerary
Morning: The Bay of Mont-Saint-Michel
The day begins with the vast expanse of the bay, where sky, sea, and salt marshes form a landscape in constant motion. The tides, shifting light, and unmistakable silhouette of Mont-Saint-Michel lend the setting an almost otherworldly quality.
This first immersion reveals the scale and beauty of the region’s great landscapes. As the journey unfolds, nature becomes gradually more structured and intimate, ultimately becoming a source of inspiration and a medium of expression for gardeners and landscape designers.
Lunch at La Taverne du Mouton Blanc
Tucked away in the winding streets of Mont-Saint-Michel, La Taverne du Mouton Blanc offers a warm and welcoming break amid the village’s historic surroundings.
After the spectacular views over the bay, lunch provides an opportunity to discover a more intimate atmosphere, framed by ancient stone walls and medieval houses. A natural transition before leaving the Mont and heading into the surrounding countryside.
Ending the day at Château de Boucéel
Away from the bustle of Mont-Saint-Michel, Château de Boucéel offers a first glimpse into the idea of a garden made for living. Its English-style parkland does not strive for perfect symmetry. Ponds, lawns and ancient trees surround the château, shaping nature into a carefully composed landscape. Here, the garden becomes an extension of the house, designed both for leisurely strolls and everyday life.
The evening continues at the château’s former farmhouse with a bistronomic dinner, available by reservation. Served around a large Norman table, this convivial experience carries on the estate’s warm, family atmosphere before guests retire for the night.
Day 2: From the Designer’s Garden to the Garden of the World

Morning at the Gardens of La Ballue
Around 25 minutes from Château de Boucéel, the Gardens of La Ballue mark a new stage in the journey.
Laid out on 17th-century terraces, they were reimagined in the 20th century by architects François Hébert-Stevens and Paul Maymont. Topiary, carefully framed perspectives and garden rooms create a route that is both structured and full of surprises.
As visitors move through the gardens, sculpted greenery frames the view, conceals the château, then reveals it from a new angle. After the natural landscape of the bay and the lived-in parkland of Boucéel, La Ballue presents the garden as a work of art: conceived, designed and carefully staged.
Lunch at L’EssenCiel
After visiting the gardens, the journey continues to Fougères, around 30 minutes away, for lunch at L’EssenCiel.
In a refined contemporary setting, the restaurant showcases seasonal cuisine prepared with local produce. Precise without being overly elaborate, the dishes echo the theme of the day in their own way: thoughtful compositions shaped by what the region has to offer throughout the seasons.
Afternoon at the Parc Botanique de Haute Bretagne
Around ten minutes from Fougères, the Parc Botanique de Haute Bretagne brings a new dimension to the exploration of gardens. Spread across 25 hectares, its 24 themed gardens bring together plant species from different continents. Japanese-inspired gardens, romantic landscapes, woodland areas, water features and botanical collections create a true garden of the world, designed as a succession of atmospheres and journeys.
While La Ballue focuses primarily on the architecture of space, the botanical park draws on plant diversity and the changing seasons.
Dinner at Le Casse-Graines
After exploring the Parc Botanique de Haute Bretagne, the day continues at Le Casse-Graines, set in the estate’s former farmhouse.
The chef serves seasonal cuisine based on fresh, locally sourced ingredients, with a particular focus on vegetables and plants. After the designer gardens of La Ballue and the park’s botanical collections, this restaurant offers a final expression of the day’s theme, bringing plants and the seasons directly onto the plate.
After dinner, return to Château de la Ballue for the night.
Day 3: Wild Nature and the Garden as a Refuge

Morning at the Mortain Waterfalls
On the third day, the journey returns to a wilder, more untamed natural landscape.
Nestled within rocky woodland, the Mortain waterfalls offer a striking contrast to the carefully designed gardens of the previous day. The sound of rushing water, the cool shade of the forest and the sandstone terrain create an almost unexpected atmosphere in this part of Normandy. The Grande Cascade, around 25 metres high, and the Petite Cascade can be explored on a walk tailored to the time available. This stop is a reminder that gardens draw their earliest inspiration from the forms, textures and movements of nature itself.
Lunch at Villa Bois Joli
After exploring the Mortain waterfalls, the journey continues to Bagnoles-de-l’Orne for lunch at La Villa Bois Joli. Housed in an elegant 19th-century residence, the restaurant overlooks a charming garden and serves French cuisine inspired by the flavours of Normandy. This stop provides a natural transition between the wild landscapes of the Mortain region and the more intimate atmosphere of Château du Gué aux Biches.
After lunch, the estate is just a few minutes’ drive away, where your hosts will be waiting to welcome you.
Afternoon in the Gardens of Château du Gué aux Biches
Château du Gué aux Biches marks the final stage of the journey, set within a 13-hectare natural park near the Andaine Forest.
Here, the garden is more than a place to admire. It surrounds a living home, lovingly maintained and inhabited by its owners. More intimate than the grand gardens open to the public, the estate offers a glimpse into a deeply personal relationship with the landscape, shaped by the seasons and the art of hospitality.
By prior arrangement, the visit can continue with a Danish-inspired afternoon tea prepared by your hosts, Klaus and Søren. Served in the gardens when the weather allows, this shared moment reflects their heritage and personal story. Danish specialities, conversations with the owners and the peaceful atmosphere of the estate come together to create a warm and distinctive conclusion to the journey.
After this final interlude, transfer to Laval TGV station, approximately 55 minutes away by car.
From the Bay of Mont-Saint-Michel to the contemporary gardens of La Ballue, from the botanical collections of Haute Bretagne to the wild landscapes of Mortain, this itinerary explores different ways of shaping and living alongside nature.
Landscaped park, designer garden, botanical garden or garden made for living: each stage offers a distinctive vision of plant life and the landscape.
